In purezza, il Trebbiano, nonostante tutta la sua ruvidità, il suo sapore aspro ed i suoi limiti organolettici, è comunque portatore di quei valori di semplicità e genuinità, piuttosto rari nei vini bianchi, che riusciamo ad ottenere attraverso la coltivazione con metodo biologico e l'aggiunta di bassissime quantità di anidride solforosa .
