Due Costate di bovino da 300g l'una, spessore 3cm circa. La costata di bovino è il piatto per BBQ (barbecue) e griglia per eccellenza, viene confezionata intera con l’osso che ha la funzione di donare gusto e accumulare calore che rilascerà al momento del consumo, mantenendola alla temperatura ideale per una buona degustazione.
La costata di manzo è da sempre in competizione con la cugina fiorentina (Porterhouse o T-Bone), a differenziarla da quest’ultima è l'assenza del filetto. La fiorentina è composta da due parti: filetto e controfiletto che nella costata vengono separate; l’osso quindi mantiene la forma a T tipica anche della bistecca americana anche detta T-Bone, le fiorentine sono tratte generalmente dalle vertebre posteriori che sono più sottili rispetto alle anteriori da cui generalmente sono tratte le costate.
Le carni che proponiamo si adattano alla perfezione alla cottura su fiamma viva, ma anche il forno non le disdegna. Se volete stupire i vostri ospiti potete osare scegliendo cotture differenti e proporre un menu ricco sia di sapore sia di cotture!

L'Azienda Agricola F.lli Assanelli è un'azienda a conduzione familiare situata nelle campagne che circondano Treviglio. Carlo e Simone allevano bovini da tre generazioni, nel rispetto delle tradizioni contadine e nel rispetto della stagionalità, occupandosi personalmente di tutte le fasi della produzione. L'azienda è circondata da 40 ettari di terreni che garantiscono la produzione di foraggi destinati all'approvvigionamento dei capi; i campi sono in parte coltivati a mais, erba medica e loietto, in parte mantenuti come prati stabili polifiti ovvero erbe con una molteplicità di essenze locali che arricchiscono la razione dei vitelloni di profumi e nutrienti 100% naturali: l'attenzione all'alimentazione e al benessere animale è estrema. Ideale in casi di contratture lievi, mal di testa, pesantezza alle gambe, nausea, in stati ansiosi, per coadiuvare il sonno o dolori mestruali.
